Carrot and Butternut Squash Slow Cooker Soup Recipe


I have a new obsession. This soup recipe is so good that I've had nothing else for lunches in the last month, and I'm still not bored with it. As you are my lovely internet friends, I thought I'd let you in on the secret of how to make this amazing, very easy, tasty and healthy soup. Oh, and it's also free on Weight Watchers, if you're a counter as well.


Ingredients:
1kg carrots
3 leeks
1 butternut squash
1 chilli (only if you like it spicy, it may not be much but it really packs a punch!)
2 vegetable stock cubes


Method:
Peel the butternut squash and get rid of the soft middle bit.
Top and tail the carrots - you don't need to peel them, unless you want to.


Then chop everything. The smaller you chop it the quicker it will cook, so I use making soup for practising my speed chopping skills!


Chuck it all into the slow cooker (or really big pan if you don't have a slow cooker - but why do you not have one?!) and make up your stock. I use two vegetable cubes and make it up to 800ml.


Pour the stock over the vegetables and put the lid on. Slow cook on low for around 8 hours, but it will be perfectly fine if you leave it overnight or whilst you're at work. If you're doing it on the hob, simmer away until the veg is really soft and mushy. 


My slow cooker likes to make everything really liquidy, so when it's finished cooking, I use a mug to drain off some of the stock, but it's up to you how thick you like your soup. I then use a stick blender to blend it until smooth, again this is personal preference as to how smooth you like it.


This recipe makes enough for 4 generous portions, which I serve with a cheese triangle stirred into it. I know it sounds weird, but you should try it, it adds a creaminess without the fat and propoints!

  2. Aah Butternut squash and carrot soup is my fave! I make mine with ginger, lime and coconut so it's really Thai inspired!
